Pineapple upside down cake at  Tap Tap restaurant

phenomenally unexpected.

like an elevated pound cake.

dense, friable, enchanting.

golden, proud, thick. slowly undressing.

holds its own.

birthed from a weathered and well-seasoned skillet.

imperfect tidbits of pineapple caramelized beyond recognition.

by thin hands of a chef that need no recipe.

presented with a single spoon.

we don’t use it.
