Long day Brussel Sprouts

It’s cold. It’s dark.

And after a long day of work in the city, I really just want Brussel sprouts.

In the fridge I had a bag with a few Brussel sprouts left in it. I took the remaining bits and pieces of red grapes, scallions and bacon, also in the fridge and arranged them in a baking dish. Drizzled with olive oil and a sprinkle of salt and pepper. Roasted in the oven at 400 degrees and it gives me plenty of time to work on a glass of Malbec.

I hate to say “How simple is that?” But really, how simple is it?
