Pears

September 4, 2011

First of the bittersweet is popping up at the market.

September has arrived. Where has the year gone so quickly?
A friend’s pear tree is heavy with fruit. As a result I was gifted with about 12 beautiful pears. Yesterday the secret ingredient was without a doubt: pears.

I poached half in bath of Vincent Arroyo melange, cinnamon, sugar, orange peel, bay leaf and saffron. Such beauty in bobbing pears. So simple and yet so rewarding.

The others ended up in the bottom of a brown butter cake, which I later topped with candied ginger coated in brown sugar. Still yet, I added more pear to gorgonzola pudding. Perfect, served warm with a glass of port…oh, pears.

I anticipate something involving pears and gingerbread will follow. Fall is a wonderful time of year and I’ve yet to tire of pears.
